BBQ Rubs - 5 Tips for Cooking Meat

#1  The best BBQ rubs can also be used for roasting and baking meat – so don’t limit the seasonings to grilling on the barbecue.

An example of this is – put your chicken pieces in a baking pan, drizzle with olive oil and then liberally apply Sweet Inferno – and put in a 375° oven for about 30-35 minutes. Another example is cooking pork with our BBQ rubs. Rub the entire pork roast with Tuscan Temptation and put in the oven on either roast or bake. You can even poach salmon with our Mediterranean Bliss.

By the way, do you know the difference in your oven settings?

Most sources agree that for bake and roast the temperature comes from cycling through the upper heating element and the lower heating element. But the roast setting will allow for a more intense oven temperature from the upper element in order to caramelize and brown the skin.

#2  When someone wants to grill steak, bbq chicken or bbq fish they often ask "How much rub do you use?“

BBQ RIB-EYE RUB RECIPE

The answer is quite individual. Here's a picture of a rib-eye about to go on the grill. It’s been rubbed with our Steak Mojo. It's a large piece of meat that’s about to be grilled so I would use a larger amount of BBQ rub - up to 1.5 - 2 tablespoons on each side. I happen to like strong flavors so I use a lot of our wonderful BBQ rub on my steaks and roasts.  If you like your grilling spices more subtle then start with about a tablespoon and see how you like that - you can always use more the next time!

BBQ CHICKEN RUB RECIPE When you are going to make a whole BBQ chicken it will take quite a bit to get complete coverage. As you may know one of my favorite ways to use Sweet Inferno is on chicken. And I’m not even a big fan of chicken! But with Sweet Inferno it’s another story. For a whole chicken plan on using 3-4 tablespoons.

BBQ SALMON RUB RECIPE

I love baking or roasting salmon in the oven with our Mediterranean Bliss on it. For a pound of salmon I use about a tablespoon. You can also do the same with grilling salmon on the barbecue. BBQ Salmon is the best! Either put it directly on the grates (oil the grates first) or put it on oiled foil which you then put on the grates.

#3  Another great to use our BBQ rubs is to infuse oil or butter with the rub and then ladle the oil/butter mixture over the cooked food.

My favorite way to fix shrimp is to gently heat olive oil and butter in a small pan with 1-2 tablespoons of Steak Mojo. I then grill my shrimp on a double skewer. TIP: Either buy the double skewers (see pictures) or use 2 skewers to prevent the shrimp from rotating on the skewer when you turn it. Once plated simply ladle the Steak Mojo mixture over the shrimp. Simple and delicious!!

#4  Don’t forget the cavity. If you’re doing a whole chicken rub the cavity with the BBQ rub too. Or put some type of citrus in it – lemon, lime or orange.

#5 Get creative – our rubs are versatile:

Add Tuscan Temptation to oil and vinegar for a salad dressing.   Tuscan Temptation can also be used to make delicious croutons.  Magical Mediterranean is wonderful in meatballs. Many of our rubs are great in sauces for a more complex flavor.
