Spring in to Asparagus
Asparagus is a staple in my home but in the spring it's even more delightful! We love the thick stalks as they have more flavor IMHO. Our Umbria Olive Oil Dipping Spice is the perfect accompaniment or you can do what we did and make an easy sauce. It's somewhat like aioli - which I cannot make to save my life - and I can make most things.
So for a quick take on this classic stir together 1/4 cup of mayo, 1.5 tablespoon fresh squeezed lemon juice and 1.5 teaspoons of Umbria Dip stir until all ingredients are mixed.
Steam or parboil your asparagus so they're still a bit crispy. You can drizzle the sauce on the asparagus or just set it out for your guests to dip the stalks into.
The most wonderful thing happens when you combine these ingredients - it brings out the lavender in the Umbria dip. It's still not flowery tasting but just a bit more of a prominent flavor. Delightful!
Don't want a sauce or a dip? Just sprinkle some Umbria Dip on your asparagus add a bit of olive oil and put in the oven on 400 degrees for about 12-15 minutes. If you like it a bit charred put it under the broiler for about 45-60 seconds. You'll love it!
